Black Belt Salad with Sassy Salmon Dinner

 Black Belt Salad Dressing
 
 Ingredients:
  • 1/4 of a cup Seasoned  rice vinegar 
  •  1/2   cup of sesame oil
  • 1/8 cup tamari or soy sauce
  • 1 tea sugar
  • 1  juice of a whole lime 
  • 2 tbs mince fresh garlic (or jar fresh)
  • 4 tables spoons of fresh ginger (or in a jar fresh)
  • 1 tea of red pepper flakes 
  • 1 pinch Chinese 5 spice (or a pinch of anise cinnomon )
  • 1 pinch salt
 
Salad
  • Spring Greens 
  • Melon 
  • Pear 
  • Candied Pecans
 
Mix & whisk all ingredients together let them all marry at least half  hour. Store use up to 1 month.

Put onto of your favorite greens with melon,or pear & add candied pecans to knock it up a notch
 
 
 
 
Sassy Salmon Rub w/ Avocado topping
Now this is a quick way to do a 5 star dinner in 15 minutes 
You need two large mixing bowls
  • Salmon for 4 
  • 1 lemon 
  • Salmon Rub (see below)
  •  Tin foil on a cookie sheet.

  •  1 for the olive oil                                            
  •  1 for the spices

 Spices for the rub
  • 1 Tbs of each one
  • Pepper
  • Salt
  • Onion Powder
  • Paprika 
  • Cumin 
  • Oregano
  • Curry
 
(if you don't have oregano & curry handy you can use 2 tbls of Cardamon )
 
Put rub (spices)  in 1 large mixing bowl so you  cover both sides of your salmon 
 
in the other mixing bowl 1 cup of  olive oil 
Dip salmon in bowl of oil then put the salmon in the bowl  of the spices
flip on both sides so they are covered in spices
Put salmon the tin foil covered cookie  and squeeze fresh lemon on top of salmon

Cook salmon @ 450 for 10 min then turn on broiler for 2 more minutes to get the top crunchy
 
While this is cooking Sassy Salmon throw together your Avocado Salsa

Avocado salsa
  • 1 avocados chopped up
  • 1/2 cup spicy fresh salsa with onion &tomato pieces
  • (if you don't have salsa cut up 1/4 purple onion & 1/2 cup finely chopped tomatoes)
  • 1/2 tea cayenne pepper (or 1 fresh Sereno chili pepper)
  • 1/2 tbs olive oil
  • 2 tbs cilantro
  • 1/2  lime squeezed 
  • pinch of salt & pepper
  • 1/4 tea sugar (artificial sweetener)

 Mix together set aside 
 
When serving put the avocado salsa, spoon it onto the top of the salmon  as shown below or in a small ramakin dish next to the salmon on the same plate as shown below
 
Serve salad also on the same plate  your salmon dinner for a 
 1 plate service
